1½ cups dry brown or green lentils, rinsed
1¼ cups salsa (Mateo’s works beautifully)
3 cups vegetable broth
½ yellow onion, diced
1 tbsp chili powder
1 tsp cayenne pepper
3 tsp ground cumin
1 tsp hot paprika
1 tsp dried oregano
1 tbsp dried parsley (or ¼ cup fresh parsley)
1 tbsp soy sauce (or coconut aminos)
1 tbsp apple cider vinegar
Pinch of salt
1 tbsp olive oil
For serving

Taco toppings of choice: lettuce, tomato, avocado, cheese, cilantro, lime, etc.
Instructions
Prep: Dice the onion and rinse the lentils under cool water.
Add to Slow Cooker: Place the diced onion and lentils into the slow cooker.
Pour: Add vegetable broth and salsa to the crockpot.
Season: Stir in chili powder, cayenne, cumin, paprika, oregano, parsley, soy sauce, apple cider vinegar, olive oil, and salt. Mix until well combined.
Cook: Cover and cook on high for 3–4 hours, until the lentils are tender and most of the liquid has absorbed. Stir occasionally if possible to prevent lentils from sticking to the sides.
Adjust: Taste and adjust seasoning if needed. If the mixture is slightly saucy, allow it to cook uncovered for a few minutes to thicken.
