1 large white onion, diced
1 cup half and half
2 tsp white wine vinegar
Cayenne pepper, to taste (start with a pinch)
Salt and black pepper, to taste
Instructions
Prep: Wash kale and strip leaves from stems. Dice onion and garlic. Wash and chop potatoes into ½-inch pieces.
Brown: In a large stock pot or Dutch oven over medium heat, brown the Italian sausage for 6–10 minutes, breaking it into pieces. Remove sausage and set aside, leaving the drippings in the pot.
Sauté: Add onion, garlic, and potatoes to the pot. Cook for 6–8 minutes, stirring occasionally, until onions soften. Season with a pinch of cayenne, salt, and black pepper.
Simmer: Pour in chicken broth and bring to a boil. Reduce heat to medium and simmer for about 15 minutes, or until potatoes are fork-tender.
Add: Return the sausage to the pot. Stir in the half and half. Add kale in handfuls, stirring between additions until wilted.
