1 head broccoli, cut into florets
2β3 tbsp olive oil
Garlic powder, to taste
Onion powder, to taste
Dried thyme or Italian seasoning, to taste
Salt and black pepper, to taste
Instructions
Preheat: Preheat oven to 425Β°F.
Prep Sweet Potatoes: Brush the cut side of the sweet potatoes with olive oil and season lightly with salt and pepper if desired. Place face down on a parchment-lined baking sheet and roast for 15 minutes.
Season Chicken: While the sweet potatoes begin roasting, pat chicken thighs dry and drizzle with olive oil. Season with garlic powder, onion powder, thyme or Italian seasoning, salt, and black pepper.
Add Chicken: After the sweet potatoes have roasted for 15 minutes, add the chicken thighs to the baking sheet or a second pan. Roast for about 20 minutes, or until the chicken is cooked through. Larger chicken thighs may need an additional 5β10 minutes.
Cook Broccoli: Toss broccoli florets with olive oil and your preferred seasonings. Air fry at 400Β°F for about 8 minutes during the last portion of cooking, until slightly crisp and browned at the edges. (Alternatively, roast in the oven for 15β20 minutes.)
Serve: Plate the roasted chicken thighs alongside the sweet potatoes and broccoli. Enjoy warm.
