Ingredients
1 mango, peeled, pitted, and diced
1 avocado, diced
⅓ cup red onion, diced
½ red bell pepper, diced
½ cup fresh or thawed frozen corn kernels
½ cup canned black beans, rinsed and drained
2 tbsp fresh cilantro, chopped
2 tbsp lime juice
¼ tsp salt
⅛ tsp black pepper
Instructions
Prep: Wash the bell pepper. Peel and dice the mango and avocado. Dice the red onion and bell pepper. Rinse and drain the black beans. If using frozen corn, open the bag and set to the side. Chop the cilantro.
Combine: Add mango, avocado, red onion, bell pepper, corn, black beans, corn, and cilantro to a medium bowl.
Season: Pour in lime juice and season with salt and black pepper. Stir gently until evenly combined, being careful not to mash the avocado.
Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
Serve: Enjoy with tortilla chips, tacos, grilled fish, chicken, or spooned over grain bowls.
Tips/Notes
Add diced jalapeño for extra heat.
Add avocado just before serving if making ahead to keep it fresh and vibrant.
