1 cup shredded carrots (about 2 medium) or matchstick carrots
⅔ cup unsweetened applesauce
2 eggs
1 cup almond or coconut milk
¼ cup pure maple syrup
1 Tbsp melted coconut oil
2 cups rolled oats
1 tsp baking powder
1½ tsp cinnamon
¼ tsp salt
½ cup shredded coconut (unsweetened preferred)
½ cup golden raisins
⅓ cup chopped pecans or walnuts
(Optional) 1 Tbsp chia or flax seeds for extra protein
Instructions
Prep the oven and ingredients: Preheat the oven to 350°F (175°C). Wash and shred the carrots if using whole ones, and chop the nuts if needed. Lightly grease a muffin tin or line with parchment paper muffin liners.
Mix the wet ingredients: In a medium mixing bowl, combine shredded carrots, applesauce, eggs, almond milk, maple syrup, and melted coconut oil. Whisk until smooth and evenly combined.
Add the dry ingredients: Add rolled oats, cinnamon, salt, and baking powder to the wet mixture. Stir until just combined.
Fold in the mix-ins: Gently fold in shredded coconut, golden raisins, and chopped nuts (and chia or flax seeds, if using).
