½ cup granulated sugar
½ cup brown sugar
1 tsp cinnamon

1 tsp baking soda

¼ cup Greek yogurt (or sour cream)
2 eggs
1 tsp vanilla extract
3–4 very ripe bananas, mashed
1 cup chopped walnuts or pecans (optional)
Instructions
Preheat: Preheat oven to 350°F. Lightly butter a 9×5-inch loaf pan.
Mix Dry: In a large bowl, combine flour, granulated sugar, baking soda, salt, cinnamon, nutmeg, and nuts (if using).
Melt: Melt the butter and allow it to cool slightly.
Mix Wet: In a separate bowl, with a whisk or fork whisk together eggs, Greek yogurt, melted butter, brown sugar, and vanilla. Stir in the mashed bananas until fully combined.
Combine: Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
Pour: Transfer the batter into the prepared loaf pan. Gently tap the pan on the counter to even the batter.
Protect: Lightly tent foil along the long edges of the pan if needed to prevent over-browning.
Bake: Bake for 60 minutes. Insert a toothpick into the center. If it comes out clean, the bread is done. If still moist, bake an additional 5 minutes and test again.
